The present document entitled “LCA study Environmental impacts (D6.1)” by EURECAT, presents a study on the environmental aspect of MED4Youth technology by carrying out a Life Cycle Assessment (LCA). The document reflects the results of activities performed within the framework of Task 6.1 “Environmental assessment” whose main objective was to define key factors influencing the environmental benefits of ingredients to produce new sourdough breads.
Three types of bread were analysed in this study: 1) sourdough bread with apple pulp from cider production, hereafter called “cider bread” 2) sourdough bread with multigrain, called “MG bread” and 3) commercial white bread “commercial bread” (research benchmark). The work carried out in this task was created based on data collected in Deliverable “D2.3. Report on the criteria to choose the sourdough bread for the interventions” and data provided by the NOVAPAN project partner.
The LCA analysis was performed in accordance with European ISO standards and ILCD Handbook. Software SimaPro v9,1 was used to calculate the environmental indicators. The study covers most of the Environmental impact category indicators according to the PCR 2012:06 CPC 234: Bakery Products; v. 3.0 of 2020-01-20
